The Benefits of Chia Seeds

Superfood responsible for controlling food cravings and promoting weight loss.

This month, I decided to talk about one of my favorite little known health miracles-The Chia Seed. Remember Chia Pets? Well, the seeds are actually edible and contain a wide variety of health benefits. Chia is truly a superfood and should be part of everyone's daily health regimen. Chia Seeds are loaded with anti-oxidants, vitamins, minerals, fiber, amino acids, protein, and the Omega 3 fatty acids-alpha lineoleic acid. They address so many health concerns, that many feel that they are one of the most beneficial and functional foods around. They control food cravings, control blood sugar levels, soothe the digestive system, provide energy, and promote weight loss.

Chia can be eaten in a wide variety of ways. It can be sprinkled on salads and finished dishes, mixed into drinks and smoothies, stirred into yogurt and oatmeal, stirred in soups, or simply placed in a glass of water. It doesn't matter where you eat it, just make sure that you do. One to two tablespoons a day will pack a mighty punch in promoting wellness.

Basic Chia Pudding

2 cups almond milk
3/4 cup chia seeds
2 tablespoons honey or agave nectar.

1. In a large bowl, mix all ingredients together, stirring well to combine. Allow pudding to sit for five minutes, and then stir again.
2. Give the pudding a stir every five minutes over a 30 minute period, until the pudding is thickened.
3 Pudding will be ready when the chia seeds have plumped up.
4. Refrigerate until ready to serve.
5. Add nuts, fruit, coconut or anything that strikes your fancy.
